Rainbow Fruit Skewers Recipe
Ingredients
- 16 medium strawberries (see note 1)
- 16 raspberries
- 3 mandarin oranges (peeled and segmented)
- 2 mangoes
- 1 medium pineapple (cut into chunks)
- 16 green grapes
- 3 kiwis
- 32 blueberries
- 16 Red grapes (Red grapes or blackberries can also be used)
Instructions
Prepare the fruit:
- Wash and dry all fruit. Cut the strawberries in half if they are too big, peel and slice the pineapple into bite-sized chunks.
Assemble the skewers:
- Thread one piece of each fruit onto the wooden skewer in rainbow order: strawberry & raspberry (red), mandarin orange (orange), pineapple (yellow), green grape & kiwi (green), blueberry (blue), and purple grape or blackberry (purple).
- Continue assembling until all skewers are filled.
- Arrange on a platter and serve fresh, or store in an airtight container in the fridge until ready to enjoy.
Notes
- If the strawberries are big, you can get away with 8 strawberries sliced into halves.
- If making ahead, store in the fridge for up to 2 days.
- For smaller portions, create mini fruit skewers using toothpicks instead of full-sized skewers.
- Plan for extra fruits so keep extra skewers on available.
- Add a side of yogurt dip or melted chocolate for extra flavor.
