As the weather warms up, nothing beats a crisp, cool salad to keep you refreshed. Just like our cucumber apple salad, this combination is so good!

This strawberry and cucumber salad with apple cider vinegar is a true showstopper and has become one of our summertime favorites for kids and adults alike.

My kids love it cold and for good reason. It’s an easy way to cool off the heat while eating up your fruits and veggies (did you know cucumbers are botanically fruits and not veggies?)

How to make strawberry cucumber salad

Wash your strawberries and cucumber. Cut them up into desired shapes or sizes. I opted to dice mine into cubes. You can cut up into slices if you prefer.

Transfer the chopped up fruits into a bowl and set aside.

Mix the honey and apple cider vinegar to make the dressing, then drizzle it over the chopped fruits.

Toss gently to coat. Refrigerate for about 10 to 15 mins before serving.

How to serve

This vibrant salad pairs well with grilled proteins like chicken or fish, making it a perfect accompaniment to your summer barbecues.

We serve with spicy salmon bites, air fryer breaded fish fillets, boiled chicken thighs and lots more

It also complements sandwiches and wraps for a light and refreshing lunch.

Storage instructions

To keep your strawberry cucumber salad fresh, store it in an airtight container in the refrigerator for up to 2-3 days preferably without the honey- vinegar dressing. Toss on the dressing when you are ready to serve

If you are storing leftovers that have already been mixed with the dressing, the cucumbers may release some liquid over time, so you might want to drain it before serving.

  • Use English or Persian cucumbers for their crunchier texture and fewer seeds.
  • Toss the salad gently to avoid mashing the ingredients.
  • Let the salad chill for a few minutes in the refrigerator before serving. If you are making this up to 3 days ahead, add the dressing about 20 mins before serving to let the salad absorb the flavors.
  • You add other ingredients like mint, basil, or dill for extra flavor. Try making a strawberry cucumber with feta by adding some feta cheese.
  • This is a sweet salad. If you want a savory strawberry cucumber salad, add some diced onions to the mix and use a creamy dressing.

FAQs

Can I make it ahead of time?

While you can prepare the ingredients in advance, however if you are making it up to 3 days ahead i recommend to leave out the dressing and add it 20 mins before serving time.

Is it suitable for those following a specific diet?

This salad is naturally gluten-free, low in calories, and can be made vegan by omitting the honey and using a vegan friendly substitute.

Can I use frozen strawberries?

I highly recommend fresh strawberries for this recipe as frozen thawed strawberries will be mushy.

How do I prevent the cucumbers from becoming watery?

For this recipe I didn’t have this problem as we usually enjoy this salad immediately.

However, you can add some salt to the diced cucumber, let it sit for about 15 mins to extract moisture then drain and rinse and before assembling the salad.

Ingredients
  

  • 12 oz strawberries
  • 1 large English cucumber
  • 1 tablespoon honey
  • 2 teaspoons apple cider vinegar

Instructions
 

  • Wash the strawberries and remove the green stems. Slice or quarter the strawberries and place them in a large bowl.
  • Wash the English cucumber and slice off the two ends before dicing it. Add the cucumber cubes to the bowl with the strawberries.
  • In a small bowl, whisk together the honey and apple cider vinegar until well combined.
  • Drizzle the honey-vinegar dressing over the strawberries and cucumbers.
  • Gently toss the salad to evenly coat the fruit and ‘vegetable’ with the dressing.
  • Serve the strawberry cucumber salad chilled or at room temperature. Enjoy!

  • For best flavor, let the salad rest in the refrigerator for 10 – 15 minutes before serving to allow the flavors to meld.
    You can add other herbs or ingredients like mint leaves, feta cheese, or sliced red onions to complement the flavors.
