How to make roasted garlic aioli sauce
Roast the garlic
Preheat the oven to 400°F (200°C). Slice off the top of the garlic bulbs, place on a foil and drizzle with oil. Wrap the garlic bulbs in foil to form a packet

Roast in preheated oven for 40 to 45 mins. Let it cool then press out the roasted garlic cloves. Transfer to a mixing bowl then mash with a fork.
Add the mayo, brown mustard, lemon juice, salt and pepper. Mix to combine. Taste and adjust seasoning if needed. Use immediately or store in the refrigerator in an airtight container for up to 5 days.

Roasted garlic aioli
Ingredients
- 3 bulbs Garlic
- 3 Tablespoons Olive oil
- 1 cup mayonnaise
- 2 tablespoons lemon juice
- 1 teaspoon mustard (spicy brown or Dijon mustard)
- ⅛ teaspoon salt (add more to taste)
- ⅛ teaspoon black pepper (adjust to taste)
Instructions
Roast the garlic
- Preheat the oven to 400°F (200°C)
- Slice off the top of each bulb to expose the cloves.
- Place bulbs on a piece of foil large, then drizzle oil over the top of the bulbs
- Wrap the bulbs in the foil, place on a baking sheet. Bake in the preheated oven for about 40 to 45 mins or until tender and caramelized.
- When it's cooked to your liking. Remove from the oven, let it cool then unwrap. Press out the bulbs into a bowl then mash with a fork.
- Add the mayonnaise, mustard, lemon juice, salt and pepper to the mashed garlic. Mix to combine, taste and adjust seasoning.
- Use immediately or store in the refrigerator for up to 5 days.
Notes
- You can season the bulbs lightly with salt and pepper before baking. If you do not add extra salt or pepper until you taste the aioli.
