Melt the chocolate slowly either in the microwave at 30 seconds intervals and stirring in between until uniformly melted.
Scoop out about 4 tablespoons and divide into two small bowls. Add a drop of green food color to one and blue to the other.
Mix the individual color till well combined. Then spread the plain melted chocolate on the prepared baking sheet before randomly drop the colored ones on it.
With a skewer, make swirls to mix in blend in the colors. Be careful not to blend it in too much. Top with the Lucky charm marshmallows and sprinkles. Refrigerate until firm then break into pieces.
Fun variations
Try using holiday-themed marshmallow shapes, swirling in peanut butter, topping with crushed candy canes, mixing different chocolates etc.
You can also use your favorite holiday themed m and ms to match holidays like Easter, 4th of July and Christmas.
How to store chocolate bark
Leftover lucky charms bark can be stored at room temperature in an airtight container for up to 1 week.
For longer storage, keep in an airtight container in the refrigerator for up to 2 weeks. Bear in mind that long refrigeration may cause the marshmallows to become slightly stale over time.
Helpful Tips
- For thicker marshmallow bars, add an extra 4oz bar of high quality white chocolate such as Ghirardelli or Lindt. I do not recommend using candy melts, which are not real chocolate.
- This recipe only uses the marshmallow pieces picked out of Lucky Charms cereal, but you can also add some of the cereal pieces too for a fun variation.
- While a few drops of food coloring can be mixed in for a fun pop of color, it is optional as the white chocolate and marshmallows also look great on their own.
- Use gel food coloring not liquid because water based food color can cause the chocolate to seize.
- The parchment paper helps with getting off the chocolate bark.
FAQs
Usually ¼ to ½ inch thick. Thinner may be too delicate or messy, thicker may be too much chocolate.
Chocolate bark is a type of candy that features chocolate, usually dark or milk chocolate, that has been spread flat and topped with various mix-ins that get mixed in or sprinkled on top as the chocolate hardens.
Quality dark, milk, or white chocolate work well.
Allowing the melted chocolate to cool completely is what enables it to harden. Letting it set at room temperature or chilling it in the fridge helps speed up cooling.
