Ingredients

lemon juice

(spicy brown or Dijon mustard)

(add more to taste)

(adjust to taste)
Instructions
Roast the garlic
Preheat the oven to 400°F (200°C)
Slice off the top of each bulb to expose the cloves.
Place bulbs on a piece of foil large, then drizzle oil over the top of the bulbs
Wrap the bulbs in the foil, place on a baking sheet. Bake in the preheated oven for about 40 to 45 mins or until tender and caramelized.
When it's cooked to your liking. Remove from the oven, let it cool then unwrap. Press out the bulbs into a bowl then mash with a fork.
Add the mayonnaise, mustard, lemon juice, salt and pepper to the mashed garlic. Mix to combine, taste and adjust seasoning.
Use immediately or store in the refrigerator for up to 5 days.
Notes
You can season the bulbs lightly with salt and pepper before baking. If you do not add extra salt or pepper until you taste the aioli.
Fresh garlic and quality olive oil make a significant difference in the flavor.
Ensure the garlic is well-roasted to achieve a mellow, sweet flavor.
If you want a smooth sauce, you can blend the sauce with a stick blender till smooth.
For a plant based alternative, use Hellmann's plant based mayo.
