This all in one dish combines ground beef, tender rice, and a few other ingredients all cooked to perfection in the oven. It's the ultimate crowd-pleasing casserole that's guaranteed to be requested often.

How to make hamburger rice casserole in easy steps!
Preheat your oven to 420°F (215.5°C)
Grease your casserole dish with a brush and oil or oil spray then set aside.
Saute the onion on garlic in 2 tablespoons of oil over medium heat till fragrant. Add the ground beef, break it up and continue to cook until browned and no longer pink. Drain excess grease if needed.
Transfer the browned beef to the casserole dish, add the washed and drained rice.

Add the beef consommé or broth and onion soup and water. Mix to combine, top it off with the butter slices.

Cover the dish tightly with foil then bake in the preheated oven for 50 to 60 mins until the rice is cooked through and all the liquid has been absorbed.
Remove the foil and fluff rice. Serve with your favorite vegetables.


Variations
- Add diced bell peppers, onions, or mushrooms for extra veggies.
- Substitute ground turkey or chicken for the ground beef.
- Make it spicy by adding diced jalapeños or red pepper flakes.
- Want it cheesy, in the last 10 mins of cooking, remove the foil check the rice, fluff it then add ½ to 1 cup of your favorite shredded cheese (cheddar cheese, mozarella) or cheese blend to the top. let it continue cooking till cheese is fully melted.
- Turn this into a Tex mex dish by adding taco seasoning to the meat. Be mindful of the salt in this fish so ensure you use low sodium beef broth and adjust to taste. It's easier to fix a low salt dish than a salty one.

What to serve with hamburger rice casserole
While this all in one ground beef and rice casserole is satisfying on its own, you can round out the meal with simple sides like a crisp green salad, green beans with almonds, roasted broccoli or brussels sprouts, or crusty bread.

How to store and reheat
Refrigerate leftovers in an airtight container for 3-4 days. To reheat, cover with foil and bake at 350°F until heated through, about 20-30 minutes. You can also reheat individual portions in the microwave.

Helpful Tips
- Feel free to add chopped vegetables like mushrooms, bell peppers, zucchini, or asparagus to this dish. Just cut them into ½ inch pieces and mix them with the cooked beef in the casserole dish. No need to pre cook them.
- Basmati and Jasmine rice are excellent choices for this recipe because they maintain their shape well. Brown rice is also an option, but you might need to add more liquid and extend the baking time.
- This recipe as is doesn't require extra salt. However you can reduce the sodium content further by using low-sodium broth or water instead of beef broth. You can also opt for low-sodium French onion soup.
FAQs
While I haven't tried with brown rice, I see no reason why you can't. However, you will need more liquid and will need to adjust the cooking time as needed.
Mix in diced carrots, peas, or corn before baking.
Not all brands are gluten free. You will need to check the ingredients to make sure the one you are getting is gluten free.
Cheddar is classic but Monterey jack or mozzarella work too.

Hamburger rice casserole recipe
Equipment
Ingredients
- 2 tablespoons olive oil
- 1 ½ pounds ground beef (I used 90% lean)
- 1 small onion (chopped)
- 3 large garlic cloves (minced)
- 2 ½ cups Jasmine rice (basmati rice will work too)
- 2 (10.5) ounce French Onion soup
- 2 (10.5) Ounce beef consommé (or beef broth)
- ⅓ cup water
- ¾ cup unsalted butter (sliced)
- Fresh chopped parsley or green onions for garnish (optional)
Instructions
- Preheat your oven to 420°F and lightly grease a 9x13-inch casserole dish with cooking spray. Set it aside.
- In a large skillet over medium-high heat, heat 2 tablespoon of olive oil. Saute the onions and garlic till fragrant.
- Add the ground beef to the onions and garlic. Break the beef into smaller pieces and sauté until the beef is fully cooked and no longer pink. About 5-7 minutes.
- Drain any excess grease if necessary.
- Transfer the cooked ground beef to the prepared casserole dish, add the uncooked rice, French onion soup, beef consommé, and water. Stir everything together.
- Place slices of butter on top. Cover the dish with foil and bake in the preheated oven for 50 to 60 minutes or until all the liquid has been absorbed and the rice is cooked through.
- Once done, fluff the rice with a fork and garnish with freshly chopped parsley or green onions. Enjoy!
