Air fryer chicken fajitas
Ingredients
- 1 lb chicken breast (Or thighs cut into strips)
- 1 medium red bell pepper
- 1 medium yellow bell pepper (sliced into strips)
- 1 small red onion (sliced into large chunks)
- 2 tablespoon olive oil
Fajitas seasoning
- ½ teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon coriander
- ½ teaspoon chili powder
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- ½ teaspoon salt
To serve
- 4 low carb tortillas
- Sour cream
- pico de gallo
- guacamole
Instructions
- Mix the seasoning to make a seasoning blend.
- Transfer chicken strips to a bowl add oil and seasoning blend to the chicken. Mix till all the chicken pieces are well coated.
- Transfer the seasoned chicken to the air fryer basket and air fry at 380°F for 7 mins.
- Pull out the basket, shake the basket to move the strips around. You can use a pair tongs.
- Next add the peppers and onions. (See note 5) Mix then continue cooking for another 6 to 8 mins or until chicken is cooked through and internal temperature is at least 165°F (74°C)
- When chicken is cooked through, let it rest for 2 mins before serving.
