How to make mashed potatoes for two

Wash, Peel and dice potatoes. Transfer to a pot. Cover potatoes with water, add some salt and bring to boil. Cook till potatoes are fork tender.
In the mean time warm milk up in the microwave. Drain potatoes then return potatoes to the pot over low heat for a couple of minutes to evaporate the moisture (this is optional)
Add butter, salt, black pepper and some of the milk to the potatoes (start with 2 tablespoons). Mash potatoes till smooth.
Add the rest of the milk if needed. Taste and season with more salt and pepper as necessary. Serve immediately topped with butter.

Creamy Mashed potatoes for two
Ingredients
- 1 ½ lb russet potatoes
- ¼ cup milk
- ¼ teaspoon salt
- ¼ tsp ground pepper
- 2 tablespoon butter
Instructions
- Wash and peel potatoes. Then cut potatoes into cubes.
- Place potato cubes in water and add salt. Bring to boil. Once the water comes to a boil, cook the potatoes for another 15 to 20 minutes or until they are tender.
- Drain the potatoes . Add butter and pour in hot milk (start with 2 tablespoons)..
- Mash potatoes till smooth. As you mashed potatoes, add remaining milk to achieve the desired mashed potato consistency if needed. Puree the potatoes until they are as smooth as possible without any lumps.
- Serve mashed potatoes with chives, butter or Parmesan
