    Ingredients
      

    • 2 cups cucumber (diced)
    • 1 medium red bell pepper (diced)
    • 1 small red onion (diced)
    • 1 jalapeno pepper (diced)
    • 15 oz black beans (drained and rinsed)
    • 15 oz yellow corn (drained)
    • 2 Tuna (drained and flaked)

    For the Dressing:

    • ¼ cup mayonnaise
    • ½ cup sour cream
    • 1 tablespoon lime juice
    • 1 teaspoon taco seasoning (optional)
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
    • 2 cloves garlic minced
    • 1 teaspoon mustard

    Instructions
     

    • In a small bowl, whisk together the mayonnaise, sour cream, lime juice, taco seasoning, salt, black pepper, and minced garlic to make the dressing.
    • Put dressing in the refrigerator while you make the salad.
    • In a large bowl, combine the diced cucumber, red bell pepper, red onion, and jalapeno pepper.
    • Drain and rinse the black beans, and add them to the bowl.
    • Drain the yellow corn and add it to the bowl.
    • Drain the tuna cans and flake the tuna into the bowl.
    • Pour the dressing over the salad ingredients and gently toss to combine.
    • Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
    • Serve chilled and enjoy!
