Mexican tuna salad
Ingredients
- 2 cups cucumber (diced)
- 1 medium red bell pepper (diced)
- 1 small red onion (diced)
- 1 jalapeno pepper (diced)
- 15 oz black beans (drained and rinsed)
- 15 oz yellow corn (drained)
- 2 Tuna (drained and flaked)
For the Dressing:
- ¼ cup mayonnaise
- ½ cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon taco seasoning (optional)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 cloves garlic minced
- 1 teaspoon mustard
Instructions
- In a small bowl, whisk together the mayonnaise, sour cream, lime juice, taco seasoning, salt, black pepper, and minced garlic to make the dressing.
- Put dressing in the refrigerator while you make the salad.
- In a large bowl, combine the diced cucumber, red bell pepper, red onion, and jalapeno pepper.
- Drain and rinse the black beans, and add them to the bowl.
- Drain the yellow corn and add it to the bowl.
- Drain the tuna cans and flake the tuna into the bowl.
- Pour the dressing over the salad ingredients and gently toss to combine.
- Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
- Serve chilled and enjoy!
