Strawberry cucumber salad is one of our favorite refreshing summer delights! A vibrant salad that combines juicy strawberries, crisp cucumbers, with a sweet and tangy dressing, thanks to the blend of the honey and apple cider vinegar which creates a delicious burst of flavor in every bite.
Wash the strawberries and remove the green stems. Slice or quarter the strawberries and place them in a large bowl.
Wash the English cucumber and slice off the two ends before dicing it. Add the cucumber cubes to the bowl with the strawberries.
In a small bowl, whisk together the honey and apple cider vinegar until well combined.
Drizzle the honey-vinegar dressing over the strawberries and cucumbers.
Gently toss the salad to evenly coat the fruit and ‘vegetable’ with the dressing.
Serve the strawberry cucumber salad chilled or at room temperature. Enjoy!
