How to make water melon
Cut water melon into bite sized pieces then add to a bowl, add the blueberries and crumbled feta cheese. If using mint, chop and add to the bowl.
Mix the honey and lime or lemon juice to make the dressing. Then drizzle over the watermelon, blueberries and feta cheese. Serve immediately or chill for 15 mins before serving.
How to store
This salad is best eaten the day it's made. If making ahead, it's best to keep ingredients separate. Store the cut watermelon, blueberries, and feta cheese in separate airtight containers in the refrigerator. Assemble and toss in honey lime dressing just before serving.
I don't recommend storing leftovers because it will become all watery. Make what you can consume at a time or just store separately and mix when ready.
