There's nothing quite like a warm, cheesy quesadilla to satisfy those comfort food cravings. Whether you're looking for a quick snack, an easy hearty lunch, a simple dinner or feeding a crowd this Mexican classic is sure to hit the spot.

Best cheeses for quesadillas
When making quesadillas with cheese, it's best to choose good quality cheese that's melts beautifully and a good pull. While my top choice is usually mozzarella, here are some of my other favorites to use.
- Monterey Jack: A classic choice with its mild flavor and excellent melting ability.
- Cheddar: Sharp cheddar adds a tangy kick and creamy texture.
- Queso Oaxaca: These Mexican cheeses are specifically made for quesadillas and melt beautifully.
- Pepper Jack: For a little heat, try adding some spicy pepper jackq cheese.

How to make easy cheesy quesadillas
While my go-to method is pan-frying quesadillas on the stovetop, you can also make them in the air fryer or oven for a hands-off approach.
In a pan on the Stove top
Melt butter over medium heat. Place tortilla in the hot buttered skillet. Add the cheese and seasoning if using.
Cook till the bottom of the tortilla is lightly browned, with a spatula, gently fold the cheese filled tortilla, then flip to the other side. Continue to cook till golden brown and cheese is melted.
Transfer finished cheese quesadilla to a cutting board, then repeat process for the other tortillas. When done, cut quesadillas into wedges with a knife or pizza cutter.
In the air fryer
Place tortilla on a plate, add the cheese and seasoning, then fold tortillas. Place the assembled quesadillas in the air fryer basket.
Brush with oil or melted butter and cook at 350°F / 180°C for 7 to 8 minutes, flipping halfway, until crispy and golden with the cheese all melted.
In the oven
Preheat your oven to 400°F (200°C). Arrange the quesadillas on a baking sheet and bake for 8-10 minutes, or until the cheese is melted and the tortillas are lightly browned.
What to serve with cheese quesadillas
Quesadillas are incredibly versatile and can be served with a variety of tasty accompaniments. Some of my favorites include:
• Guacamole or avocado salsa

• Sour cream or Greek yogurt
• Refried beans
• Mexican rice
How to store leftover cheese quesadilla
If you happen to have any leftover quesadillas, they can be stored in the refrigerator for up to 3 days. To reheat, simply pop them back in the oven, air fryer, or skillet until heated through and crispy again.
Helpful Tips
- Use a non-stick pan or griddle to prevent sticking and ensure even browning.
- Use butter for extra crispiness
- Don't overfill the quesadillas, or the filling may spill out.
- Let the quesadillas cool slightly before slicing into wedges for easier handling.
FAQs
While I used a low carb tortilla, either flour or corn tortillas will work! However, it's important to note that Flour tortillas will yield a softer texture, while corn tortillas provide a crunchier bite.
Grated cheese melts more evenly, but sliced cheese can create pockets of gooey goodness.
Use a sharp knife or pizza cutter to slice the quesadillas into wedges or rectangles.

Easy cheese quesadilla recipe
Equipment
- spatula
Ingredients
- 2 tablespoons unsalted butter
- 4 Large Low carb tortillas
- 2 cups shredded mozzarella cheese
- ⅛ teaspoon garlic powder
- ⅛ teaspoon cumin powder
- ⅛ teaspoon chili powder
- Cilantro for garnish
Instructions
- Heat large skillet over medium heat and coat some with butter.
- Place tortilla in skillet, sprinkle with ½ cup cheese, some garlic powder, cumin and chili powder.
- Once bottom browns, fold tortilla in half and press lightly.
- Cook until cheese melts, then transfer to cutting board.
- Then repeat process with the remaining tortillas and cheese.
- When you are done making the quesadillas, cut them quesadillas into halves/thirds.
- Garnish with cilantro. Serve hot with desired dips/sauces.
Notes
- I used Mozzarella cheese, feel free to use your favorite cheese including a blend of more than one cheese.
- Freshly grated cheese is my preference because they do not contain caking agents and melt better.
- However, you can also use store bought pre shredded cheese for your convenience.
- The extra seasoning is optional feel free to leave it out.
- You can either serve toppings like salsa or pico de gallo on the side or add it into the quesadillas as it cooks just before folding.
