Leftover turkey cranberry sandwich is a delicious way to enjoy Thanksgiving leftovers! This easy, loaded holiday sandwich combines turkey, stuffing, cranberry sauce, and Swiss cheese on sourdough bread for a flavorful meal.
4Slices Leftover turkey meat ( use as much meat per sandwich as you want and feel free to shred it instead)
4slices Swiss cheese(or choice of cheese)
½ cupstuffing(use more as needed)
¼ cupgravy(warm)
1cuparugula leaves(spinach, mixed greens, or lettuce)
¼ cupwhole cranberry sauce(use more as needed)
Instructions
Heat a large skillet over medium heat and melt the butter, ensuring it coats the entire surface.
Toast the bread slices in a single layer until golden brown on both sides, working in batches if necessary. Add more butter as needed. Transfer the toasted bread to a plate or cutting board.
Warm the turkey slices in the microwave in 30-second intervals till warmed through.
To assemble the sandwiches, spread a layer of Dijon mustard on one side of each slice of bread.
Layer 4 slices of turkey on the bread, followed by 2 slices of Swiss cheese.
Evenly distribute the stuffing on each sandwich and drizzle with a few spoonfuls of warm gravy.
Add fresh arugula and a generous spoonful of cranberry sauce on top.
Place a second slice of bread on each sandwich and press gently to secure.
Serve with chips and warm gravy on the side. Enjoy immediately!
Notes
Use any sandwich bread you prefer. Toast it in a toaster, oven, or stovetop, or enjoy it soft.
Go easy on the wet ingredients so that you don't get a soggy sandwich
Reheat the leftovers in the microwave before building your sandwich.
This recipe also works well with leftover chicken breasts instead of turkey.
Customize with mashed potatoes or extra gravy. Some people prefer to add stuffing or a gravy-soaked slice of bread in the middle.
