Instructions
Heat olive oil in a medium pot over medium heat. Add the chopped onions and sauté for 3 minutes, stirring occasionally, until softened.
Stir in the chopped celery and garlic and cook for another 3 minutes until fragrant.
Add the frozen green peas.
Pour in the vegetable broth, add salt and pepper, and simmer on low heat for 10–15 minutes, until the peas are tender.
Use an immersion blender or transfer the soup in batches to a blender. Blend until smooth. Add more broth if you prefer a thinner consistency.
Pour into bowls, add a swirl of cream if desired, and garnish with fresh herbs or extra peas.
Notes
This soup has a slightly higher broth-to-peas ratio, giving it a lighter, smooth consistency.
Taste after blending and add more salt, pepper, or cream as desired.
Store in an airtight container in the fridge for up to 3 days. Reheat gently on the stove.
Optional extras: Fresh herbs like parsley or mint, a squeeze of lemon juice, or a sprinkle of Parmesan can add extra flavor.
