Our Apple Cucumber Salad is the ultimate refreshing side for summer. Crisp, juicy red apples are combined with cool, hydrating cucumbers in this light and tasty salad.

Ingredients

(red delicious or honey crisp)

English cucumber

honey

apple cider vinegar

Tablespoons
lemon juice
(to toss the apples in)
Instructions
Wash the apples and cucumber thoroughly.
Core and dice the apples into small cubes. Transfer the diced apples into a bowl and toss them with the lemon juice to prevent browning. Set aside.
Cut the cucumber in half lengthwise, then slice each half into half or thirds and dice. Transfer to a bowl
Drain the lemon juice from the diced apples and add them to the cucumber.
In a separate bowl, whisk together the honey and apple cider vinegar until well combined.
Drizzle the dressing over the diced apples and cucumber then toss gently until well combined and evenly coated with the dressing.
Refrigerate the salad for at least 15 minutes before serving to allow the flavors to blend in.
Serve chilled or at room temperature. Enjoy!
Notes
Go for crisp, firm apples and cucumbers with no soft spots. That crunch factor is everything!
Try to cut the apples, and cucumber into relatively equal size pieces for uniformity.
Whisk the dressing up really well to blend all the flavors together.
While this salad can keep for up to 3 days, it is best consumed within a day or two, as the apples may start to brown over time.
