These slow cooker country style ribs are fall apart tender, coated in a rich BBQ sauce made with cola, brown sugar, and spices. An easy crockpot dinner that’s juicy, flavorful, and perfect for busy weeknights or family meals.
Arrange the pork ribs in the in slow cooker then put the sliced onions on top.
Pour in the cola, and 1 cup of BBQ sauce over the ribs then add the brown sugar, cayenne, garlic powder, salt, and black pepper.
Cover and cook on low for 8 to 10 hours or on high for 6 to 8 hours, until the ribs are very tender and easy to pull apart.
For a caramelized finish, transfer the cooked ribs to a foil-lined baking sheet. Brush with the remaining BBQ sauce and broil for 3 to 5 minutes, watching closely, until the edges start to brown and the sauce thickens.
Notes
Why cola works: The acidity and sugar help break down the meat while adding subtle sweetness.
Don’t skip the onions: They add moisture and flavor as they cook down into the sauce.
Low and slow is best: Cooking on low gives the most tender, fall-apart texture.
Watch the broiler: The sugar in the sauce can burn quickly, so keep a close eye during the final step.
Sauce consistency: If the sauce is too thin after cooking, simmer it on the stovetop for a few minutes to thicken.
Make ahead tip: These ribs taste even better the next day after the flavors settle.
