Slow cooker chicken and stuffing is an easy, cozy dinner that’s perfect for busy nights. This dump-and-go recipe combines juicy chicken thighs, savory stuffing, and optional vegetables in the crock pot for a satisfying meal with that requires minimal effort and clean up.
10.5ounceCanned condensed cream of chicken with herb soup
1 ½cupchicken broth
8ouncesour cream
6ounceBox stuffing mix(I used Stove Top’s Savory Herbs Stuffing)
1small onion(diced)
2sticks (diced)
¼cupbutter(melted)
Fresh parsleyfor garnish (optional)
Instructions
Arrange the chicken thighs in a single layer at the bottom of the crockpot.
In a mixing bowl, whisk together the condensed cream of chicken with herbs soup, chicken broth, and sour cream until smooth. Pour this mixture over the chicken.
In a separate bowl, combine the stuffing mix, onion, celery, and melted butter. Stir until everything is well coated, then spread it evenly over the creamy chicken mixture in the crockpot.
Cover the crockpot with the lid and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
When done, sprinkle with fresh parsley for garnish. Serve over mashed potatoes with a side of vegetables. Enjoy!
Notes
Add the stuffing on top to avoid soggy breading. This keeps it light and fluffy.
You can add the green beans on top of the stuffing if you want to have smothered green beans with your meal.
If you like it extra creamy and saucy, you can add an additional can of condensed cream of chicken with herbs soup.
I added onions and celery to the stuffing but it can be added in with the cream sauce if you prefer.
