This one-pot creamy kielbasa pasta is a weeknight winner that’s packed full of flavor. With penne pasta and savory kielbasa sausage, it's one of the easiest and most delicious pasta dishes you'll make.
In a large dutch oven over medium-high heat, add the avocado oil. Add sliced kielbasa and cook until lightly browned.
Add the diced onions and bell peppers. Sauté for 2-3 minutes until starting to soften.
Add the minced garlic and sauté for 1 minute until fragrant.
Pour in the chicken broth, diced tomatoes, heavy cream, cayenne pepper, Italian seasoning, salt and black pepper.
Add the uncooked pasta and stir to fully combine, making sure pasta is mostly submerged. Add up to ½ cup more broth or water if needed.
Bring to a boil, then reduce heat and simmer for 12-15 minutes, stirring often, until pasta is cooked through.
Remove from heat and stir in the shredded cheese until fully melted and combined.
Garnish with chopped parsley if desired. Serve immediately.

You Can substitute other pasta shapes or proteins like chicken or beef.
